Oxygen Radical Absorbance Capacity (ORAC) is a unit value assigned by researchers to measure a food’s antioxidant value. Foods with a high ORAC value are beneficial to the body by increasing plasma antioxidant levels. Since these values are difficult to influence in the body, any increase in plasma antioxidants is significant. Raw fruits and vegetables have a unique combination of antioxidants that have proven better than supplementation with individual antioxidant vitamins.
